
I LOVE fresh mint tea. Buy a bunch of fresh mint from the shops, or better still, grow it yourself. Pour boiling water into a teacup over the mint and allow to seep for 3 - 5 minutes. Enjoy as is.
Pancakes
1/2 cup oats (starchy carb)
3 egg whites (protein)
1/4 cup cottage cheese (protein)
150 g fruit--banana is nice (fruit)
cinnamon
sugar free maple syrup
Combine oats, egg whites, cottage cheese, banana, and cinnamon. Blend (you can add a little water if batter is too thick) and pour into a non-stick frying pan and make either one very large pancake or several smaller ones. Once cooked, serve with sf maple syrup and sliced banana on the side.
Yoghurt, Fruit and Protein Shake
200g yoghurt (dairy)--if flavoured, try to select low fat and low sugar or diet
150g (fruit)
30g whey protein powder (protein)
Add fruit to yoghurt, warmed chopped apple or pear is nice with yoghurt poured over the top. Then have a separate protein shake or just add a tiny amount of water to the protein powder and mix to make a thick paste. You can put it in the freezer for a little while to make a sort of ice-cream, nice in summer!!
Salmon/Chicken, Veggies & Sweet Potato
100g (cooked) chicken, salmon or other protein (protein)
1/2 cup (cooked) basmati rice or baked sweet potato (you can marinate it in sugar free maple syrup for a sweeter taste (starchy carb)
cooked sliced green beans (veggies)
1 tablespoon low fat tomato pasta sauce or Rogan Josh curry sauce or similar
This one is a no-brainer and great for when in a hurry. Simply mix all together and eat.
Fresh Chicken Stirfry Sandwich
One of my favourite lunch time meals.
100g smoked chicken
2 pieces wholewheat bread
2+ cups of raw stirfry vegetables (I prefer them raw, but a quick, light fry may appeal to you more)
15ml sweet and sour sauce
Place stirfry veg on bread. Top with slices of chicken. Drizzle sweet and sour sauce over to complete.
And that's how simple 'clean' food is to prepare! Remember I told you, the less cooking methods, the better. I no longer fret about getting dinner prepared hours in advance. It only ever takes about 7 minutes, max, now, provided I have all the fresh ingredients on hand. Happy 'clean' eating!
