Some of my best childhood memories were created in the kitchen, with Dad. He taught me to cook and bake and I think I got that love of baking from him. Got to do two of my favourite things today--taught my girls how to bake our family favourite. Seeing as though it's cold and windy and rainy outside today, and because the girls had a half school day, how could we pass up the perfect opportunity to spend time in the kitchen together? Savannah chopped the chocolate, Madison helped pour in the ingredients and eat the cookie dough and I just enjoyed being with my favourite girls.
1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
2 cups oats
1 1/2 tsp salt
1 tsp baking powder
1 tsp bicarbonate of soda
2 cups chocolate chips (used 200g dark lindt chopped chocolate)
1 1/2 cup nuts (optional--but highly recommended)
Cream butter and sugar together. Mix in eggs and vanilla. Add all remaining ingredients to make a stiff dough.
Bake at 180 deg C / 375 deg F for 10-12 minutes.
